How I choose hotels for this list

I've been staying in hotels across Korea since my early twenties — for weekend trips, work, and just exploring. Over the years I've noticed that the gap between a hotel's star rating and what it's actually like to stay there can be enormous. These picks are the places I'd recommend to friends: mid-range to upper-mid properties where value is hardest to judge from the outside, with something specific to say about each one — the neighbourhood, the breakfast, the things the photos don't show.
